Broccoli Lover’s Poutine
Best poutine ever <3
I had some random ingredients in my fridge & a whole lot of imagination
I whipped this up in the morning, scooped it into my glass lunch container, and it stayed warm until lunch! It was so delicious I had to make it for my man the next day. Digging into it before heading off to work, he declared it the best hot breakfast he’s ever had!
We both agreed that the Daiya really brings everything together. This dish is creamy, flavorful, filling…and yet, light. Feel free to dig into this poutine without guilt! ;)
From my kitchen to yours <3
1 tbs coconut oil
2 tsp jalapeno pepper, minced
1 cup baby nugget potatoes, diced
1 1/2 cups broccoli, chopped
2-3 tbs Shiitake miso gravy
1 tbs nutritional yeast
sprinkle of Herbs de Provence, to taste
sea salt & black pepper, to taste
3 tbs Daiya mozza style shreds
Directions:
1) Preheat oven to 350 degrees. In a frying pan, saute jalapeno peppers, potatoes, & broccoli in coconut oil over medium heat until golden and tender.
2) Stir in all remaining ingredients, leaving out the Daiya. Scoop into oven-safe casserole dish.
3) Sprinkle Daiya shreds on top. Bake for 5-7 mins, until Daiya is melted.
4) Stir it all up, serve warm! Nom nom

The one I use is made by The Naam in Vancouver. Because it’s local, pretty much every health food store has it
If they don’t, ask them to order it! <3
