Blueberry Muffin Pancakes (GF or Spelt)

I normally have a Green Vanilla Mylkshake for breakfast every morning, but this past weekend I decided to treat myself to pancakes…both days blank Blueberry Muffin Pancakes (GF or Spelt)

Chocolate-Covered Katie posted these Blueberry Pie Pancakes on her blog, but I think they taste more like muffins. Either way, thanks Katie! They are so delicious, and “pleasantly plump!” (Katie’s words).

My first attempt at these was kind of a sad one…I wanted to make them gluten-free instead of using WW flour, but I kinda failed in two ways:

  • I didn’t spread them out enough to cook the inside properly
  • I took them out of the pan too soon, not giving them enough time to cook

Regardless of my fail, I ate them anyway. I thought about returning them to the pan to let them cook longer, but I was so hungry I could have licked the inside of a compost bin and called it breakfast. Under-cooked or not, they were delicious!

The next morning, I decided to use my Sunny Boy Spelt Pancake & Waffle Mix, which I picked up from Costco. This mix never fails me <3

My pancakes held together, and tasted even better than the ones before! (To be fair, though, it was probably because they were actually cooked blank Blueberry Muffin Pancakes (GF or Spelt) .) I used fresh blueberries both times, which I think makes a world of difference. They were so warm & gooey…Just thinking about it makes me nervous I might have to clean the drool off of my keyboard.

I have to wonder if these would work as muffins? Pretty sure they would! But I’m still enjoying them as pancakes ;)

Gluten-Free Blueberry Muffin Pancakes
Ingredients:
 1/2 cup fresh blueberries
1/3 cup brown rice flour
1/4 tsp xantham gum
2 tbsp rolled oats
1/2 tsp cinnamon
2/3 tsp baking powder
pinch sea salt
1 tsp pure vanilla extract
1/2 tsp stevia
1/3 cup almond mylk

Directions:
1) Stir together dry ingredients, then add the wet. Fold in blueberries
2) Heat coconut oil in a frying pan over medium heat.
3) Scoop half the batter into the pan, making one pancake. Scoop the other half to make the other pancake.
4) When little bubbles start to show (2-3 mins), turn pancakes over. Cook for about another minute, until both sides are golden.
5) Serve warm, with Earth Balance margarine & pure maple syrup blank Blueberry Muffin Pancakes (GF or Spelt)

egg replacer for 1 egg (I used Ener-G)

    • Hi Tami! I’m so happy to hear you love my recipes :) I do not count calories, though, so I won’t post them. An easy way to figure out the stats in your meal is to add up all the calories in the dish and divide by the number of servings. It’s really easy. Hope this helps!
