PB Fudgy Baked Oatmeal, Peanut Veggie Stirfry, & A Krazy Kitty
Katie keeps making Boatmeal (baked oatmeal) and I finally bought these new ramekins to make the single-servings for me and Dallas. We both loved her cookie dough flavour, but when I decided to make it again, it became…Peanut Butter Brownie Fudge Oatmeal! I used the recipe for her cookie dough flavour, but left out the chocolate chips and added 2 tsps of cocoa powder and 1 tsp of peanut butter. OH EM EFF GEE. We both love having Peanut Butter Brownie Fudge Oatmeal for breakfast now ;) Thank you, Katie!!

In between cooking, blog posts, and living life, I get a kick out of watching the love affair between Mowzers and her socky. This photo makes me squeal from all the cuteness.
She likes to rub it all over her face, roll around with it, and lick it. I wish I loved my socks that much, but I just don’t.
Sometimes she forgets to put her tongue back in when she’s done licking something. I’m perfectly okay with having a kitty who’s very…er…special. Yes, special.
Speaking of love affairs, I knew Dallas had been eating a lot of Hallowe’en candy, but…
And that’s just the garbage can in the office. Notice there are no office papers, crumpled post-it notes, or shredded files. Nope, it’s all just candy wrappers. The garbage in the kitchen has seen just as much candy wrapper action, if not more. The man has a seriously insatiable sweet tooth. Clearly I need to bake more.
Oohh, and you know those Veggie Rice Paper Wraps with peanut sauce I made for lunch the other day? I turned the leftovers into a stirfry! Pretty similar to my Creamy Asian Stirfry, but this one has noodles
Yummy, nummy, noodles!
{Of course, I tried to take a fancy photo and didn’t notice until they were on the computer that my friggin’ iPhone decided to make an appearance. *sigh* Practice, practice, practice.}
It’s easy enough to reheat the noodles: I just put the noodles in a pot, boiled water in a kettle, poured it over the noodles, covered with a lid and let it sit for two minutes. Drain water, and they’re ready to eat again!
I sauteed the leftover veggies in some sesame oil until crispy-ish. That’s my new word. Trademarked.
I added in the peanut sauce (though I had to whip up a bit extra), and the re-hydrated vermicelli noodles. Stirred together until everything was creamy and mixed well.
Served on two plates and topped with chopped green onions. So yummy!! How do I know it was so yummy (other than my own tastebuds)? Dallas managed to scarf it down in two minutes while simultaneously playing Battlefield 3. Pretty sure he mumbled something about keeping me.
For simplicity’s sake, I’ll re-post the recipe for you guys here. As for the Baked Oatmeal, you gotta go to Katie’s site, because it’s only a slight variation off of her recipe ;)

Ingredients:
1/2 package brown rice vermicelli noodles, dry
Peanut Sauce:
3 tbsp natural peanut butter
1-2 tbsp Bragg’s
1 tbsp rice vinegar
1 tbsp sesame oil
2 cloves garlic, minced
1/4 tsps ground ginger
1/2 red pepper, sliced
1 cup mushrooms, sliced
1 carrot, sliced
1/2 zucchini, spiralized or sliced
2 handfuls fresh spinach, chopped
1-2 tbsp sesame oil, for frying
1/2 cup green onion, chopped
Directions:
1) Prepare vermicelli noodles according to package directions. Drain water and set aside.
2) In a large wok over medium heat, saute veggies in sesame oil until crispy-ish and golden. Stir every 1-2 minutes or so, cooking for about 6-8 minutes.
3) Stir together ingredients for peanut sauce. Add cooked vermicelli noodles and peanut sauce to pan. Toss together until everything is well mixed. Cook for 4-5 minutes more, stirring occasionally.
4) Scoop stirfry evenly onto two plates. Top with green onion for garnish and serve.

I love Katie’s oatmeal recipes, but I’ve never baked them before…. gotta try your variation, because I love PB and chocolate granola bars, and oatmeal is a step so much closer to un-processed love!!!
). I eat veggies by the cup full at lunch and especially dinner (my family has to tell me to lay off so they can have some and for my dad’s work lunch the next day. I end up serving myself last so everyone gets their fare share!!!), so I will be adding LOTS of veggies in this yummy meal. MMMMMMM!!! Sounds good for dinner (lunch is last night’s dinner of vegan mexicalli rice, beans, and bell pepper veggie mixture, and I’ll probably add a fresh side of mango sallad).
As for your noodle dish, I am a top fan of veggie stir-frying (haha, not much”fry” as much as “veggie”
Your kitty is adorable!!! At my friend’s stable, they have a sweet black cat named “Roller”, and he acts more like a dog than a cat. He rolls on his back, comes when he’s called, sits when asked, and even plays fetch! He is my little brother’s favorite cat in the whole world, and wishes that he could keep Roller. My mom’s allergic to cats, though, so we can’t keep any…. or not indoors if we do ever get one, which Mark is really keen on!
Halloween candy is a problem here. My older sister couldn’t care less (she does not have much of a sweet tooth, save for chocolate and Kit-Kats), but my two younger sisters and Mark are crazy over candy! After they are done doing their school (we homeschool), they ask for candy from their candy bags. My mom allows one treat, but then throughout the rest of the day they sneek in a bite or two from their stash! I myself find it hard to resist the good vegan candies, too….. but I will admit that I do sneek in some Candy Corn every once in a while (I don’t think it’s vegan, but I LOVE candy corn!!!). Do you have a favorite candy, or did you ever have a favorite before becoming a vegan?

Ooohh, as much as I love granola bars, I love how satisfying oatmeal is! I’ll eat granola bars on the run, but at home, oatmeal comes first ;) So I’m with ya!
Roller sounds so cute, haha! My sister has a cat who acts like a dog. Maybe you guys COULD keep Roller, considering he seems to like living outside anyway? That would be kinda neat for you and your brother

Now, though, there are always lots of vegan treats and desserts lying around. Usually for budget’s sake, I do the baking (have you seen my post on how to make Vegan Butterfingers?!?!), but I definitely still indulge
life is too short not to have dessert! My favourite vegan candies are any of the Maynard’s candies (most are vegan), as well as any little dark chocolate bars I come across. Basically, anything vegan I can get my hands on
Oreos dipped in peanut butter might be the best thing ever.
Haha, I’m just the same with veggies! Usually there are more in our lunches/dinner, but we’re on a budget, so we gotta stick to eating lotsa the cheap stuff (pasta, rice, breads, etc). Your Mexicalli dinner sounds DELICIOUS!! Mmmm I love any ethnic cuisines!

Vegan Butterfingers? Wow, I did not check that out…. That sounds really yummy! The other day I saw Dryers Butterfinger ice cream, and that made me wish SO MUCH for vegan butterfinger ice cream. Now that I know you made a vegan recipe, maybe I could combine your butterfingers with Chocolate Covered Katie’s veganized ice cream!
