Veggie Rice Paper Wraps with Peanut Sauce

This is one of my favourite lunches to make when I want something quick, satisfying, and packed with raw veggies. I can’t believe I’ve never posted it on the blog!!

Dallas came home from class the other day at lunch time & opened the pretty much empty fridge. Thinking on my feet, I told him I could make a yummy lunch for him in about 10 minutes flat. I’ve made this many times before for myself and at work, but never for Dallas. These are also really fun for a group, because everyone can assemble their own & create them how they want. Moment of truth:

I stirred together the peanut sauce ingredients and let the mixture sit. The flavours blend really well together this way!

peanutwrap8 Veggie Rice Paper Wraps with Peanut SauceI cooked brown rice vermicelli on the stove. It’s actually very quick! All you have to do is bring the water to a boil and cook the noodles for 1-2 minutes. Drain the water and noodles are ready! Much less time than rice or pasta, because the noodles are so thin & delicate. I love vermicelli <3

I sliced up some red peppers, spiralized some carrot & zucchini, and grabbed a handful of spinach.

After thoroughly wetting a rice paper wrap under warm, running water (they come dry and stiff in a package), I loaded it with vermicelli, veggies, & peanut sauce.

…then rolled it all up!

We each ate two of these. Dallas really liked them, and enjoyed the abundance of veggies. We’ve been eating some heavy food lately blank Veggie Rice Paper Wraps with Peanut Sauce Vegan, but heavy nonetheless.

Feel free to add in any veggies you like, but make sure to grate, spiral, or slice them thinly. Mushrooms and avocado are particularly tasty in these wraps, too. Experiment, have fun, get crazy blank Veggie Rice Paper Wraps with Peanut Sauce

Ingredients:
For the peanut sauce:
3 tbsp natural peanut butter
1-2 tbsp Bragg’s
1 tbsp rice vinegar
1 tbsp sesame oil
2 cloves garlic, minced
1/4 tsps ground ginger

1/2 package brown rice vermicelli noodles
4 rice paper wraps

veggies of choice, sliced thin

Directions:
1) Prepare brown rice vermicelli noodles according to package directions. Drain water and set aside.
2) Mix together peanut sauce ingredients. Stir well and set aside.
3) Wet one rice paper wrap using warm, running water. Make sure to coat all sides, until wrap is soft and pliable. Gently set on a large plate.
4) Add vermicelli noodles, peanut sauce, and veggies to the center of your wrap. Fold in both sides, then roll up like a burrito. Tada! First one is done!
5) Repeat process for remaining wraps. Serve immediately.

  1. I love love love peanut sauce. I’ll put it on just about anything. Matt was just joking yesterday that if he wants me to pay attention to something, he just needs to smear peanut butter on it.

    That spring roll is awesomely fat! I love it!

    • LOL!! Dallas could probably do the same thing to get my attention…peanut butter or chocolate :P
      hahaha the fat spring roll…I can never understand when people are like, “I’m just gonna put in a little scoop of filling so it’ll close.” Screw that! I like my spring rolls and burritos FAT pleeaaasssee! :D

    i love peanut sauce. Trader Joes used to make this really great kind, but they stopped manufactoring it. I love healthy ethnic foods, especially since I’m vegan.

    • I hear so much about Trader Joe’s, but we don’t have them in Canada :( I’m with you on the ethnic foods, though! We don’t have many vegan restaurants around here, but if we go out for Indian, Japanese (sushi), Thai, Mexican, or really anything ethnic, I’m set! :D

  7. I love wraps + peanut sauce! It’s so ironic you just posted about this b/c I was talking to a friend of mine about this earlier tonite..that I was super into these about 18 mos ago and just…forgot about them. Til tonite. And now I see your post, too. They look awesome.

    You are a pro at wrapping. Mine can be a little ripped/messy at times. lol

    • It’s so funny how that can happen with food, eh? Forgetting about it, and then ‘re-discovering.’ I forgot about these, too, until last week!
      And thank you! Haha, I just got lucky with that one. I usually stuff them so much that they burst & rip, but I like ‘em full :D
