Lemon Coconut Almond Butter Dough Balls

Why hello there, foodies! I hope you’re all having a fabulous start to your weekend.

I’m just popping in briefly to give you this delicious recipe! Always finding new ways to use up my leftover almond pulp, I’ve noticed Dallas falling weak to lemon coconut combinations lately. So that’s what I did. Of course, if these aren’t awesome enough for you, you can always cover them in chocolate ;) So go make a batch or two of almond mylk! Then make these! Because they are ridiculously easy.

I really should get back to my homework, though…then maybe I’ll get around to putting away the clean laundry that’s been in the basket for 2 weeks. Maybe I’ll make almond mylk and do the dishes, too. And maybe, just maybe, I’ll finally take down the Christmas tree {don’t judge me}.

Ingredients:
1 1/4 cups almond pulp {from 2 batches almond mylk}
1/2 cup rolled oats
1/4 cup + 2 tbsp shredded coconut, unsweetened
2 tbsp lemon juice, from 1 lemons
1/2 tsp pure vanilla extract
1/4 cup maple syrup
1/2 cup almond butter

Directions:
1. In a large bowl, stir together almond pulp, rolled oats, and shredded coconut until well-combined.
2. Stir in lemon juice, pure vanilla extract, maple syrup, and almond butter, mixing until ingredients stick together.
3. Use an ice cream scoop to form dough balls. Drop onto a plate and place in fridge.
4. Eat whenever cravings strike.

    I’m actually really jealous you still have your Christmas tree up! These looks delish but I’m allergic to almonds! Maybe I’ll make them for my man anyways!

    • haha…it’s still up two days later. it just adds something to the room! actually, I’m just lazy and it’s been a busy weekend ;)

      allergic to almonds? bummer :( I always feel so bad about allergies. Are you allergic to all nuts, just almonds, or just tree nuts? Nut allergies seem to vary person to person.

        I’ve only ever reacted to almonds and cashews (I have an epi pen, I’m pretty cool), but I’m supposed to just avoid all nuts…just in case.

        • haha I’ve seen epi pens! I would hate to have to use one, but it’s good that you carry it. Understandable that you would have to avoid all nuts.

          Just FYI, I have made these without the almond pulp, and they are just as amazing! I used a mix of rolled oats & oat flour (I know you can get brown rice flakes and use brown rice flour to keep GF), and just upped the amount of wet ingredients until they binded properly. Sub sunflower seed butter for the peanut/almond butter. Easy peasy ;)

    • Ooohh there will be many! I’ve only thrown out almond pulp once, and I felt awful about it. I hate throwing out food :(
      I’m glad people are finding these recipes useful. I wasn’t sure how many people were making their own nut mylk, but we go through a lot. More almond pulp recipes to come! I even made a separate tab for them, as they seem to be collecting ;)

    Oh my gosh! We still have our tree up, too! It’s a fire hazard, but we couldn’t take it down because of our need to be down for my Granddaddy’s funeral in California. And besides, Kolleen wants the tree to stay up untill Candelmas Day (the second of Feb., it’s a Catholic feast Day). The tree still smells lovely when the vacuum cleaner shoops up the needles around the base of the tree, which is becoming more messy with needles by the day.
    We really should take it down…. :-(
