Vegan Chocolate Coconut Haystacks
I’m sure I’ve mentioned before that I’m an insomniac. It’s plagued me off and on for years, and it seems to be back…I don’t know why. Just sometimes I don’t sleep. And when I feel compelled to bake at 3:30am, that’s when I know it’s getting bad.
You may remember when I Tweeted and Facebooked a terrible iPhone photo of the baked cookie dough oatmeal I devoured at 2:30 in the morning yesterday… Well, I thought about it afterwards, and realized that when Dallas woke up, he was going to be bummed that he missed out. Even if it was at 2:30am. So I decided to make him cookies! {though obviously I made them just as much for myself ;) }
Add this to the collection of almond pulp recipes that seems to be happening around here. Have I inspired anyone to start making their own almond mylk yet? Is there anyone who already does this? Well, boom! Now you get haystacks, too. {Can sub more rolled oats for almond pulp if needed.}
I would have taken step-by-step photos if it wasn’t such an unholy hour of the night. Sowwie. But they’re ridiculously easy to make anyway, even when you’re sleep-deprived. They have a soft, chewy texture, and are juuuust sweet enough without being too sweet. When Dallas woke up & found these in the fridge, I woke up shortly after to kisses

| Vegan Chocolate Coconut Haystacks |
- 1/2 cup vegan butter
- 1/2 cup brown sugar
- 1 tbsp natural almond butter, smooth
- 1 tsp pure vanilla extract
- 1/8 tsp sea salt
- 1/2 cup cocoa powder
- 1/2 cup almond mylk
- 1 1/4 cup almond pulp {from 2 batches almond mylk}
- 1 cup rolled oats
- 1/2 cup coconut flakes, unsweetened
- In a medium pot over low-medium heat, warm vegan butter until melted. Whisk in brown sugar until combined.
- Add almond butter, vanilla extract, and sea salt to the pot. Continue to whisk until mixed well and heated through. Slowly whisk in the cocoa powder, stirring to prevent lumps.
- Finally, whisk in the almond mylk, stirring well.
- All at once, add in the almond pulp, rolled oats, and coconut flakes. Stir well until all dry ingredients are mixed well and coated with chocolate. Remove from heat.
- Use an 1/8 cup {2tbsp} measurement to scoop up batter, and drop ‘haystacks’ onto a plate lined with parchment paper. Repeat process until all of the dough is gone.
- Allow haystacks to harden in fridge or freezer. Devour with abandon.

Also, pretty sure we are the same person. I had insomnia for almost 2 years, and it was horrendous. I totally feel your pain. I sleep better now, but falling asleep is like a 2 hour commitment. I am never tired. Except at like 2pm at work. ;)

haha, over & over again it seems like we are the same person! That’s about when the crash hits me, too, between 2-3pm. I tried giving up coffee a few years ago, but it’s just too tough with insomnia, haha. Even when it’s not bothering me, I’m the same: it takes hours to fall asleep.
I was wondering, becuase I usually set my posts to publish at 2am and you’re often the first to comment on them – yet you’re in BC too! (Usually my first commenters are early risers on the east coast!). I’m sorry you suffer from insomnia; I don’t know what I’d do without my sleep but I know the few nights in my life that have been unsettled due to insomnia have sucked.
I can see why you make these to fuel you! They look amazing – remind me of these chocolate treats I used to make as a kid (yes, the rice krispie ones but I also made some from shredded wheat which had the same look at these because of the shredded coconut haha).
haha, I was wondering if you noticed! Yep, that’s why. I’m hoping to get a better sleep tonight; I have to play catch-up now.
