I made these on Saturday night, and they lasted until Monday morning. I’m pretty sure it was an even playing field between Dallas and I, and we even “fought” over the last six. He gave me fair warning they’d be gone by the time I got home from work, so I hid 3 of them. Which I devoured as soon as I got home. Now I’m sad ‘cuz they’re gone. Cue sad face.
Another almond pulp recipe, as a result of making my own almond mylk, I guarantee these delicious treats will have you weak in the knees. Like I said, we each ate half a pan in two and a half days. That’s a lotta cookie love. Again, if you don’t have almond pulp, feel free to sub almond meal or ground oats. Though you may have to add a wee bit more liquid to your batter.

| Banana Oatmeal Chocolate Chip Cookie Dough Bars |
- 1/2 cup vegan butter
- 1/2 cup brown sugar
- 1 1/2 large ripe bananas, peeled and mashed
- 2 tsp pure vanilla extract
- 1/2 cup almond mylk
- 1 1/4 cup almond pulp {from 2 batches almond mylk}
- 3/4 cup rolled oats
- 1/2 cup garbanzo flour
- 1 tsp sea salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp xantham gum
- 1/2 cup dark chocolate chips
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream together vegan butter and brown sugar. Add in mashed bananas and vanilla extract, beating until smooth. Lastly, mix in the almond mylk. Set aside.
- In a separate mixing bowl, combine all remaining ingredients {except chocolate chips} and stir to combine. Stir well.
- Add dry ingredients to wet and mix well with a spatula. When ingredients are fully incorporated, fold in the chocolate chips.
- Spread batter evenly into a 9×9 baking pan, and bake in preheated oven for 30-35 minutes.
- Remove from oven and allow to cool 10 minutes {yeah, right}.
- Cut into squares, and lift gently from pan with a spatula. These are *very* delicate!
- Stuff your face with cookie dough <3

Oh wow…sometimes I have to be very tough with myself and just not let myself bake goodies like this because i know I’ll just inhale them. Haha, who said anything about self-discipline? None here!
