Radiatori Pasta with Tomato Basil Marinara

Ooohhh fancy schmancy name, eh? And you can have this ready in 15-20 minutes!

I’ve been lazy with my posts lately, but I’m really enjoying Reading Break. Dallas and I have spent a lot of time with his family {especially his sisters}, a little bit with mine, and there has been lots of amazing food. Since the birthday celebration is on Thursday, I plan to do a re-cap after that with lots of pictures! For now, I’m gonna leave you with an easy peasy pasta that’s delicious and ready in no time!

Fresh basil is always so pretty in any dish, and dried herbs just can’t compete. And while we were at Costco the other day, we found this big bundle of fun-shaped pastas, which included the radiatori. Yum yum! I love finding new pasta shapes!

Radiatori Pasta with Tomato Basil Marinara

Ingredients
  • 2 servings radiatori {or other} pasta, dry
  • 2 tsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup yellow onion, diced
  • 1 cup white mushrooms, sliced
  • 1 medium zucchini, chopped
  • 1/2 jar marinara sauce {I used Newman’s Own}
  • 4 large basil leaves, sliced
  • 1 cup fresh spinach
  • red chili flakes, to taste
  • sea salt & black pepper, to taste
Instructions
  1. Prepare pasta according to package directions. When cooked to al dente, drain and set aside.
  2. Meanwhile, in a large pan over medium heat, warm the olive oil. Gently saute garlic and onions in oil until onions are translucent, about 3-4 minutes.
  3. Stir in the mushrooms and zucchini, stirring occasionally. Cook until crisp tender, about 5-6 minutes.
  4. Mix in the marinara sauce, basil leaves, and spinach. Continue to cook until sauce is warmed through and spinach is wilted.
  5. Season to taste with red chili flakes, sea salt, and black pepper.
  6. Scoop pasta evenly into two bowl, then top evenly with sauce. Serve warm.

    You always have such great Costco finds! I just made an amazing Gluten, dairy, soy free pasta dish last week that was amaaazing, so now I’m itching for more. I may recreate this dish, just with boring GF pasta :)
