Beer Bread, Chocolate Truffles, and Amazing Veggies
Wanna have a peek at my food lately?
I loooove beer bread, and can seriously still taste the first slice I had at about 8 years old {no, it does not make you drunk}. My Dad had received a mix as a Christmas present and decided to bake it. I decided right than and there that it was the best bread ever. Really.
Flash forward 16 years later, I finally made my own loaf. Why did it take me so damn long? I used this recipe, substituting vegan butter {obviously} and using a bottle of Granville Island lager. I made no other substitutions. I mixed everything together in one bowl, scooped into a loaf pan, and baked it. No need to knead or rise this baby!
Results? DO NOT CHANGE the recipe! The beer reacts with the sugar in regards to taste and the way the bread rises. Also, I just don’t think I’d be down with whole wheat beer bread {if you need to make it gluten-free, I’d recommend using sweet rice flour}. OOoohh, and the melted butter drizzled on top? Makes this delicious masterpiece impossible to resist when it comes out of the oven. The top crust is definitely the best part! Honestly, this is one bread that needs no additional toppings- Just devour it warm
Dallas agrees, though he also enjoyed it with peanut butter & more vegan butter {after toasting}.

My step mom found these in the candy store where she works {out in Alberta}. I’ve never seen them here, but I’m gonna have to hunt them down! The soy chocolate truffles were like eating a delicate mousse. Melt-in-your-mouth <3
The smooth filling was definitely my favourite part <3
The ginger cayenne gourmet bar was juuust touched lightly with the ginger cayenne flavour, enrobed in a delicately smooth truffle chocolate.
The filling was a soft mousse that accompanied the chocolate well. By the way, I have no affiliation with this company. I just love their chocolates!

I’ve been trying to eat my grains earlier in the day {like for breakfast: Nanaimo Bar Baked Oatmeal}, focusing more on veggies & fruit as the day goes on. Lately, when dinner time comes, I’ll make a sauce {whether marinara, cheesy sauce, pesto, curry, etc}. The sauce is for both Dallas & I, but I’ll make him a pasta or rice, while I dry-roast veggies for myself. I’ve been using broccoli, kale, cauliflower, squash, etc. I also like to mix in some spiralized zucchini noodles, and toss everything together. Before dinner, I tend to have 2-4 pieces of fruit, depending on my level of hunger. Easy peasy! More room for chocolate & beer bread ;)

I miss beer bread sooooo much. Like so much. I also miss beer so much. This is my first year I didn’t get to enjoy a delicious winter ale!

I know my step dad buys gluten-free beer for VERY special occasions, but I think it’s at least $20 for a 6-pack, or something crazy like that.
Guacamole!! I’m with you there! I can’t get enough of avocado- I’m quite happy to slice it open, sprinkle with S&P, and devour with a spoon

Mmmm….beer bread. I am pinning this one and giving it a try, I love fresh bread and haven’t tried baking any (that I can recall).
