Nanaimo Bar Baked Oatmeal

the ooey gooey taste of a Nanaimo bar- for breakfast! Enjoy ;)
Ingredients
  • 1/2 cup rolled oats
  • 1 tsp cocoa powder
  • 1 tsp unsweetened coconut
  • 1 tsp stevia {or 1 tbsp sugar/maple syrup}
  • 1/2 tsp custard powder
  • 1/8 tsp sea salt {I use 1/4 tsp- I love salty sweet!}
  • 1/4 cup + 1 tbsp {or 5 tbsp} unsweetened almond mylk
  • 1/4 cup unsweetened applesauce {or 1/2 mashed, ripe banana}
  • 1/2 tsp pure vanilla extract
Instructions
  1. Preheat toaster oven to 380 degrees.
  2. In a small bowl, stir together dry ingredients well. Add in the wet and mix well.
  3. Scoop mixture into ramekin & sprinkle in the chocolate chips. Cover with oven- safe lid {if you have one. Recipe will taste amazing without.}.
  4. Bake @ 380 degrees for 22 minutes. Remove from toaster oven with oven-safe mitts.
  5. Serve warm! Enjoy :)
