It is so deliciously easy being green!

One of mine & Dallas’ favourite dinners is Oh She Glows Creamy Avocado Pasta. Because it’s so addicting, I wanted to find a way to make a larger amount of sauce without adding fat. In my quest to make this amazing new sauce, I also found a way to cut the fat & add in *drum roll* green peas for protein!!

You can use canned peas that have been drained, or blanch frozen peas in boiling water for a few minutes to soften, then remove with a straining spoon. Easy peas-y!

The best part is that the sauce doesn’t taste any different. It still tastes like a perfect, garlicky, creamy avocado sauce. Which we smothered pasta, broccoli, and asparagus into. More please!

Creamy Avocado & Green Pea-sto Pasta

Serves: 2

  • 2 servings dry pasta {I used whole wheat spaghetti}
  • 1 cup fresh baby spinach
  • 1 head broccoli, chopped
  • 6 spears asparagus, de-stemmed & chopped
  • 3-4 cloves garlic, minced
  • 2 tbsp lemon juice {from 1 lemon}
  • ½ cup fresh basil
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • 1 ripe avocado, pitted & peeled
  • 1 cup cooked green peas
  • black pepper, to taste
  • nutritional yeast, to taste

  1. Prepare pasta according to package directions. When cooked, place spinach into strainer and pour pasta on top {this lightly cooks the spinach}. Set aside.
  2. Dry-roast broccoli & asparagus on a cookie sheet @ 375 degrees. Bake about 8-10 mins on each side. Turn once. Set aside.
  3. Process all remaining ingredients together in a food processor until smooth.
  4. In the pasta pot, combine cooked pasta, vegetables, and sauce. Mix until well-combined.
  5. Scoop evenly onto two plates. Sprinkle with nutritional yeast {if desired} and serve!

  3. Ooh I love this, and how green it is! You could make it even greener by using zucchini for pasta haha!

    • I actually did! haha, great minds think alike. Dallas was at work and I wanted a warm “salad”, so I made pretty much this with zucchini instead of pasta. When I realized the sauce was so good, I made it again when Dallas was home, using pasta instead. Delicious both ways!

    This is my favourite recipe from OSG! Its so wonderful! I customized the bajeezus out of it though! It is super good on spaghetti squash as well, if you want to watch your carb intake at all.
