Fresh Fruit & Coconut Yogurt Parfait, plus Piña Colada Oatmeal!
On Tuesday night, I finally came across this in the store:
So Delicious Coconut Milk Yogurt!! YESSSS!! And for only $3.99! Still pretty pricey, but I’ve been dying to try it. {Plus, I don’t doubt that it’s expensive to produce.}
The next morning {on my birthday}, I decided to make a fancy breakfast for Dallas and I. Remember the Mimicreme that I used to make the Chocolate Peanut Butter Pudding Pie? Well, it made so much that I’ve had it in the freezer ever since. And yes, it still tastes delicious once thawed. The flavour a small tablespoon brings to this parfait is delicate and sweet, and totally necessary.
Sliced strawberries & bananas, a healthy scoop of coconut vanilla yogurt, a sprinkle of granola, and a swirl of almond-cashew whipping creme made these beautiful little parfaits in fancy glasses. Truth: I used to eat a lot of yogurt before going vegan. Shortly after, I did find a soy yogurt and decided to give two of the flavours a chance….ew. Sorry, but I was not a fan of soy yogurt. But the coconut mylk yogurt is pretty much exactly as I remember, and Dallas says he did not notice a difference. We both loved it, and I will be buying it again!
But I wasn’t done. Anna @ The Guiltless Life posted a Piña Colada Oatmeal a couple weeks ago, and I was dying to try it. I had 1/2 cup of canned coconut mylk leftover, and some juice from canned pineapple chunks. Since we were having parfaits, I decided to make just one portion of the oatmeal and split it with Dallas.
Because I like cooking with a total 1 1/2 cups liquid for 1/2 cup dry oatmeal, I changed the measurements a little:
- 1/2 cup oats
- 1/4 cup + 2 tbsp pineapple juice
- 1/2 cup coconut mylk
- 1/4 cup + 2tbsp water
- 1 tbsp shredded coconut {plus more for topping}
- no pineapple chunks, as I did not have any left.
For full recipe instruction, click here. This oatmeal was amazing! And a nice switch from chocolate oatmeal for breakfast. Dallas had his gone within three bites. We both loved the oatmeal, and we both loved the parfait. Such a perfect birthday breakfast!

EDIT May 14, 2012: I haven’t been able to stop experimenting with these parfaits. Try adding chocolate chips:

| Fresh Fruit & Coconut Yogurt Parfait |

- 1 cup sliced fruit {I used strawberries & bananas}
- 1/4 cup coconut yogurt, vanilla flavour
- 1 tbsp granola
- 1 tbsp non-dairy whipping creme
- In a tall glass, layer half the fruit in the bottom.
- Top the fruit with all of the yogurt, spreading evenly.
- Sprinkle granola evenly onto yogurt. Top with the rest of the fruit, and then decorate with non-dairy whipped creme.
- Smile, eat, love.

Secondly, did you score that Mimicreme in Canada? This one cookbook I have uses it like crazy but I’ve yet to find it at my (crappy) local grocery store!

I did find it in Canada! Do you have a Fairway Market nearby? I’ve also seen it in health food stores. Some of them keep it in the refrigerated section, and other stores keep it near the non-dairy milk tetra packs in the dry aisles (it doesn’t need to be refrigerated during storage). Let me know if you find it! I looove that stuff! And it’s so awesome that it freezes well.
