Thursday Things~ Double Chocolate Protein Cookies & Double Vegan Cheeseburgers

1. I used an outdated Psychology textbook all semester, only realizing days before my final how different it was from the one I should have been using. I studied & dissected the one I should have been using for two straight days, and I’m pretty sure I aced my final. That commitment included only 5 hours of sleep and the delicious energy of caffeine. Espresso, chocolate, cola. I like my poisons.

2. Dallas was a sweetheart and made dinner while I remained glued to my textbook. Whose man makes double vegan cheeseburgers for dinner? My man! {We found Yves burgers at Costco! Hurray!}. You know what’s weird? This totally looks like a McDonald’s double cheeseburger! But obviously so much better. I had it on a whole wheat English muffin with ketchup, mustard, and vegan mayo. Of course, Dallas melted Daiya cheese onto both patties <3 So good.

3. Dallas & I like to prank each other and play games sometimes. Nothing serious, just silly stuff. Example: He had his lunch warming in the toaster oven the other day while he was studying in the office. In a panicked voice I called “Dallas, your lunch is on fire!” I’ve never seen him run so fast! No, it was not actually on fire  blank Thursday Things~ Double Chocolate Protein Cookies & Double Vegan Cheeseburgers Got him! Clearly he is ready at all times for an emergency. I won’t even tell you about April Fool’s…lol.

4. Three {or maybe four?} years in a row now, I have forgotten to renew my car insurance on time. Four days went by this time before I realized why the payment hadn’t come out of my account…oh, right! My bad.

5. I cannot get enough of these Double Rich Chocolate Protein Cookies. Dallas has been gobbling them up, too. The original recipe & instructions are at Spabettie’s site. You have to make these!

My subs:

- 1/4 cup Vega natural + 2 tbsp cocoa powder

- chocolate chips instead of chocolate chunks {only because it’s what I had}

- almond mylk instead of water

- added 1 tsp stevia + 1 tsp pure vanilla extract

 

6. Tomorrow is girls’ night. Monopoly, movies, & snacks are on the menu! And probably wine, lots of wine. So excited.

  1. Yay! It wasn’t letting me comment yesterday so fingers crossed that this goes through! I was going to ask about the Yves veggie burgers – I bought some too a week or two ago but have yet to try them, I’m scared I won’t like ‘em! Are you here to tell me they’re good?? :)

    Btw I have yet to visit Nanaimo. If I do do you promise a meetup lunch? I would so love that! xx

    • Thanks, Anna! I know, there were problems with the site for most of yesterday. Everything should be all fixed now!
      Truthfully, I’m always a little nervous about fake meat products, but I do loooove the Yves ones!! And Dallas is not a vegan, yet he was the one who suggested buying more. So that says something ;)

      And yes, please!! You MUST tell me when you come to visit Nanaimo! Lunch meetup would be fabulous- there are so many great places to eat here!

    I want those cookies!!! Anything with protein powder is a fave of mine (with VEGAN protein powder, of course!). The subtle sweetness of protein powder…. oooo it’s soooo goooooood! I’m off to the kitchen NOW!! :-)
