The other day, Dallas & I found out he would be leaving the next morning for work. He will be gone for two weeks, home for one, and gone again for three months. Sad face. To celebrate our last night together, I decided I would make curry for dinner.

This whole thing kinda came together as I went along in the kitchen {as most of my recipes do}, and when I finally plated it, Dallas was super impressed.

“WOW! It’s like I’m eating in a restaurant!”

Not only is this a pretty dish, it tastes amazing. I love the mild, creamy, coconut-y taste of the sauce, combined with the flavourful pop & delicious crunch of the toasted falafel. The soba noodles were a nice change from rice, too. Dallas devoured it quickly, the second I stopped clicking with the camera and gave the go-ahead. He loved it!

Later, we went for a mini hike up and around Piper’s Lagoon, but we couldn’t do much or stay long because my tummy has been really bad lately. {For those who are interested to know, this is why there have not been many recipes on my blog lately. My list of “safe foods” has been quickly dwindling as my IBS becomes worse. It does this from time to time, but I’m trying to figure things out with my doctor. If enough people would like to know more about this, I will write a post. But for now, I’ll keep it as a blurb.}

Anyhoo, back to that curry!

-Lightly adapted from my easy vegetable curry, this recipe is very versatile. It’s very mild, for those who don’t like spicy food. Play around with the amount of spices if you want more kick.

-Substitute rice, quinoa, couscous, whatever you wish for the soba noodles if you like.

-I never make my own falafel, because it’s so easy to find good stuff in almost any grocery store. These guys came from Costco!

-And lastly, this recipe makes a lot of veggies & curry sauce, so you will have some leftovers. Just whip up some more soba noodles & falafel the next day to serve!

Yellow Vegetable Curry w/ Buckwheat Soba Noodles & Falafel

Ingredients
  • 1 tbsp coconut oil
  • 2 cloves garlic, minced
  • 2 tsp fresh ginger, minced
  • 4 large carrots, sliced
  • 1 head broccoli, chopped
  • 1 medium zucchini, sliced
  • 1 1/2 cups white mushrooms, sliced
  • 1 medium tomato, diced
  • 2 cups baby spinach
  • .
  • 2 tsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp sea salt
  • 1/2 tsp Dijon mustard
  • 6 tbsp nutritional yeast
  • 1 can light coconut mylk
  • black pepper, to taste
  • .
  • 2 servings soba noodles, prepared
  • 4 falafel balls, warmed in toaster oven
Instructions
  1. In a large wok over medium heat, warm coconut oil. Add in garlic & ginger, allowing to cook for one minute.
  2. Add carrots to the wok, allowing to cook until golden, about 5-6 minutes. Stir & flip occasionally.
  3. Add broccoli, zucchini, & white mushrooms to the wok. Allow to cook until crisp tender, another 5-6 minutes. Stir & flip occasionally.
  4. Mix in diced tomato & spinach. Allow to cook until spinach wilts, about 1-2 mins.
  5. Time for the spices! Sprinkle in curry powder, turmeric, cumin, sea salt, Dijon, & nutritional yeast. Stir very well. Allow to cook 3-4 minutes, letting the flavours blend. Stir occasionally.
  6. Stir in coconut mylk, making sure to blend well. Allow curry dish to cook at a low boil on medium-low heat for 5-6 mins. Stir occasionally. Add black pepper to taste.
  7. Evenly divide prepared soba noodles between two plates. Top with vegetable curry & two warmed falafel balls on each. Serve immediately! Store leftover curry in fridge.

  1. Sorry about your tummy :( I get that too – it’s horrible.

    I meant to buy those falafels from Costco last time – I have to get them for sure now – this look awesome!!

    • I’m glad someone can relate. It’s been so bad this past month :( Like, everyday bad. I went back for more blood work & a battery of other tests, but I think we’re sticking with the IBS diagnosis.

      Do buy the falafels! It’s such a good bargain, and they’re perfect for mixing into curries, stirfries, sandwiches or wraps, or even just by themselves! Delicious :D

  2. Haha I have made my own falafel in the past but you’re right there are so many good ones at stores – are those Costco’s own brand? I grab Veggie Patch from the supermarkets here but I like trying out different types!

    Your dinner looks yummy love those noodles!

    • I like Veggie Patch, too! I started buying them from Costco just because they’re cheaper. I just freeze them and pull them out as needed. They are not Costco’s own brand, and I already recycled the outer package…I wish I could remember! It has a yellow cover, with two clear packages of falafel inside. I found it in the fridge near the produce :)

    This recipe looks delish, however curry isn’t really one of my “safe” foods. I still eat it pretty regularly though ;)

    Also, love pipers. It makes me feel like a teenager since I have been on many dates there, gotten drunk there, had fires there, our high school went there for an activity….you get the drift ;)

    • thank you, Carly :) curry is a hit or miss for me when I’m not feeling well. this dinner actually didn’t help my tummy at all, but I knew Dallas was leaving the next day so I wanted to make a nice dinner. The things we do for love :P I’m okay now though, and plan to update about it.

      LOL!! I can imagine Piper’s would be good times for a teenager. I didn’t grow up in Nanaimo, but I remember having favourite places to go with friends, haha. I totally get the drift ;)
