I have some fabulous news: I AM DONE BIOLOGY!! Like, all done!! I am so freaking stoked!! Dallas is still away until September, but I plan to make the most of August by spending as much time with friends & family as much as possible. And yes, I’m back to blogging
First lunch date in order was with my mommy at Milano’s. After discovering they had Daiya cheese, I happily devoured a personal pizza. Boo ya.
FYI, they also offer gluten-free pizza crusts & pasta, too!
As for the kitties, Gizmo & Mowzers have quickly become best friends, snuggling & playing all the time. Mowzers still likes to put him in his place when he gets into her bubble, though…the paw comes up & she lightly smacks his face to make him go away. Haha. It’s hard to get pictures of them playing, but here are some pictures of my lil nuggets sleeping!

I looove these! Remember my Chocolate Coconut Haystacks? This is a healthier variation on that recipe. I was worried about cutting out all of the butter & sugar, but they are just as amazing without. No sugar crash! Plus with these, there is no heat involved. Just stir & enjoy!
The almond pulp comes from making almond mylk, but feel free to sub almond meal, ground oats, etc. Just keep in mind you may need to add a teeny bit more almond mylk to the batch!

| Healthy Chocolate Banana Coconut Haystacks |
- 1 1/4 cup almond pulp {from 2 batches almond mylk}
- 1 cup rolled oats
- 1/2 cup cocoa powder
- 1/2 cup coconut flakes, unsweetened
- 1/2 tsp sea salt
- 1/2 cup almond mylk
- 1 ripe banana, peeled & mashed
- 30 liquid stevia drops
- 1 tsp pure vanilla extract
- In a large mixing bowl, stir together all dry ingredients until mixed well.
- Add in the wet ingredients, stirring to combine.
- Use an ice cream scoop to shape balls and drop onto a plate lined with parchment paper.
- Devour. Keep leftovers in refrigerator.

Do you use dry almond pulp? If dry, how do you dry it? If wet, how long with it last in the fridge? Thanks Char.
I tried drying my almond pulp once & it didn’t work at all. I only ever use the wet stuff in baking. It lasts about 4-5 days in the fridge, max, I would say
