Healthy Chocolate Banana Coconut Haystacks

Ingredients
  • 1 1/4 cup almond pulp {from 2 batches almond mylk}
  • 1 cup rolled oats
  • 1/2 cup cocoa powder
  • 1/2 cup coconut flakes, unsweetened
  • 1/2 tsp sea salt
  • 1/2 cup almond mylk
  • 1 ripe banana, peeled & mashed
  • 30 liquid stevia drops
  • 1 tsp pure vanilla extract
Instructions
  1. In a large mixing bowl, stir together all dry ingredients until mixed well.
  2. Add in the wet ingredients, stirring to combine.
  3. Use an ice cream scoop to shape balls and drop onto a plate lined with parchment paper.
  4. Devour. Keep leftovers in refrigerator.
