Peanut Butter & Jam Thumbprint Cookies
In complete contradictory fashion, my rain jacket finally arrived in the mail!

Boo yah. This is the Arcteryx Alpha LT and I could not be more excited! Dallas & I have been working on getting our hiking gear together so that we can get more into the sport…& eventually do the West Coast Trail! And now, when I should be excited about the heat, I just want it to rain. haha.
And more exciting news: my kitty cat was found!! Gizmo ran away last March {almost a year & a half ago}, and I thought he was a goner. I was so sad & felt really bad for losing him. But I got a call last week saying he’d been living in a neighborhood where he was well-fed & looked after, even through the winter! I’m so glad he’s home again. He is a snuggly, lovable boy. Mowzers is still learning to share space, but they get a little closer every day. Tonight they’re playing together! It’s adorable to watch.
What’s that now? Cookays!!
Time for some delicious treats! I find anything fruit-y in the summertime to be desirable, so I was really excited when I thought these up. I used a low-sugar jam from Smucker’s, with blueberries, pomegranate, & cranberries inside. Mmmm delicious! And there’s just enough peanut butter in these babies for that perfect peanut butter flavour, but not enough to expand your pants
Aside from the low-sugar jam, these little gems are sugar-free! So tell me, what’s not to love?

| Peanut Butter & Jam Thumbprint Cookies |
- 1 1/4 cup almond pulp
- 1 cup rolled oats
- 3/4 cup oat flour
- 2 tbsp stevia
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp xantham gum
- 1/2 tsp sea salt
- .
- 1 cup almond mylk, unsweetened
- 1/4 cup applesauce, unsweetened
- 1/4 cup jam {I used low sugar Blueberry Raspberry Pomegranate}
- 1/4 cup natural peanut butter
- .
- extra jam, 1/2 tbsp for each cookie
- Preheat the oven to 350 degrees.
- In a large mixing bowl, use a spatula to stir together dry ingredients. Mix well.
- In a medium mixing bowl, whisk together the wet ingredients. When fully mixed, pour into the dry ingredients and stir to combine.
- Lay a silicone mat onto your cookie sheet. Use an ice cream scoop to portion cookies evenly onto tray. Use your thump or the back of a spoon to make an impression in each cookie. Fill each impression with a 1/2 tbsp of jam.
- Bake @ 350 degrees for 13-15 mins until tops of cookies are golden brown. Remove from oven and let cool for 2-3 mins until transferring to cooling rack. Allow to cool completely, about 10 mins.
- Devour. Store remaining cookies in the refrigerator.

I love the story of your cat! I remember I caught a cat in my yard that I had been watching awhile and as I went to drive him to the vet (looking for a microchip) I found a tattered poster to a pole. He was considerably thinner – but it was him. I think he had been missing at least 4 months. I love endings like that.
Very exciting about the trail! I loved reading up on that.
Awww! Thank you for returning him to his owner, Samantha! I love happy endings like that, too :’) I bet they were just as grateful as I am to have their baby back. I reported him missing to the SPCA & the vets, but in hindsight I should have put up posters, too.
And thank you! I’m really excited to do the trail. We’re aiming for next summer. We still have a lot of gear to buy, & a lot of training to do!
I really can’t wait for you write-up of that experience. My longest backpacking has been about 4 days. This is going to be great fun for you!
Oh I promise I will!! We’re planning on bringing the camera & I’ll do a full write-up when we get back. I’ll document our training, too. You went for 4 days?? How exciting! What was the experience like? We’re planning a full-day trip when Dallas gets back, & then hopefully we’ll get sleeping bags & a tent for some overnight practice

Thank you, Annie! Apparently everyone thought he was a stray, but once he started to get dirty & matted they brought him to the vet. When the vet found the tattoo, I got a call! I’m so glad he’s home again. Hope you get a chance to try the cookies! They are super delicious
