Easy, Amazing, Vegan Mac & Cheese For One
Thank you to everyone who participated in the discussion on my last post about dropping the vegan label, particularly those who had such nice things to say. It made it easier to feel positive when the ugly comments showed up. Though I had expected to lose half of my readership, it appears I have gained many new readers! A great big WELCOME to all of you!! As nervous as I was about being honest & writing that post, I definitely feel it has been for the best.
Moving on now to mac & cheese!
I have been obsessed with this recipe lately. OBSESSED. Every day that I’ve actually been home to cook {which, sadly, isn’t often} I have made this. Sooo going on four times now? I have already decided it will be dinner for Saturday & Sunday, too!
Since Dallas is still not home, I’m having fun making recipes “for one.” This recipe can easily be doubled {or tripled or whatever}, but it’s nice to make a quick mac & cheese in about 20 minutes that is healthy, creamy, delicious, & all for you! Don’t forget to add in your veggies

| Easy, Amazing, Vegan Mac & Cheese For One |
- 1 cup bowtie pasta, dry
- 1 cup broccoli, chopped
- 1 cup cauliflower, chopped
- .
- 1 tbsp Earth Balance {or other vegan butter}
- 1 1/2 tbsp all-purpose flour
- 1 cup plain almond mylk, unsweetened
- 1/4 cup Daiya cheddar shreds
- 2 tbsp nutritional yeast
- sea salt & black pepper, to taste
- In a small pot on the stovetop, prepare bowtie pasta according to package directions. Halfway through cooking time, add chopped broccoli & cauliflower. Allow to continue cooking.
- Pour cooked pasta & veggies into strainer in the sink. Return empty pot to the stove to prepare sauce.
- Over medium heat, melt Earth Balance & stir in flour to make a roux.
- Add almond mylk, Daiya, & nutritional yeast. Increase heat & bring to a boil, stirring for 2-3 mins.
- Reduce heat to medium-low & let simmer for another 2-3 mins, stirring occasionally. Season to taste with sea salt & black pepper.
- When sauce has thickened up, add the cooked pasta & veggies back to the pot. Stir well to coat.
- Serve warm! Nom.
