Easy, Amazing, Vegan Mac & Cheese For One

Posted on August 18, 2012
Hi foodies!

Thank you to everyone who participated in the discussion on my last post about dropping the vegan label, particularly those who had such nice things to say. It made it easier to feel positive when the ugly comments showed up. Though I had expected to lose half of my readership, it appears I have gained many new readers! A great big WELCOME to all of you!! As nervous as I was about being honest & writing that post, I definitely feel it has been for the best.

Moving on now to mac & cheese!

I have been obsessed with this recipe lately. OBSESSED. Every day that I’ve actually been home to cook {which, sadly, isn’t often} I have made this. Sooo going on four times now? I have already decided it will be dinner for Saturday & Sunday, too!

Since Dallas is still not home, I’m having fun making recipes “for one.” This recipe can easily  be doubled {or tripled or whatever}, but it’s nice to make a quick mac & cheese in about 20 minutes that is healthy, creamy, delicious, & all for you! Don’t forget to add in your veggies  blank Easy, Amazing, Vegan Mac & Cheese For One
