Four Cookies~ Vegan, Gluten-free, Sugar-free, Low-fat
Now I dunno about you, but I still have a hard time trusting myself with a large batch of cookies in the house {especially when I’m home alone!}, so a recipe for four cookies is perfect for me. I adapted this recipe to healthify it, but it originally came from this post titled ‘A Safe Amount of Cookies.’ Aptly named- I concur.
I’ve made many alterations to the recipe to keep making it healthier, as I’ve made this recipe about 6 times now {does that mean it’s still a safe amount?}. If you don’t have gluten-free flour, stick with the all-purpose and ignore the xantham gum. It’s delicious either way.
This recipe is for four cookies…so why are there only two in this photo?
Because cookie dough doesn’t last long in my house. Ever

- 1/4 cup + 1 tbsp oat flour
- 1/8 tsp xantham gum
- 1/8 tsp baking soda
- pinch sea salt
- 1 tsp powdered stevia
- 3 tbsp applesauce
- 1/4 tsp pure vanilla extract
- 2 tbsp chocolate chips
- Preheat toaster oven (or regular oven) to 350 degrees.
- In a small bowl, stir together dry ingredients to combine. Add the wet & mix well to form a dough.
- Fold in chocolate chips.
- Drop cookies onto a small pan. Bake @ 350 for 10-12 mins.
- Remove from oven and allow to cool before digging in. Nom.

Nom to the max!!!
I’m exactly the same way, Char! It’s unfortunate, but I’ve been known to eat more than half of a batch of cookies in one sitting. Yesah, really a serious problem (but it’s also a really seriously delicious problem!). So this is a perfect recipe for me to try out! I can hardly wait! I might make some before my family goes on a hike this afternoon, as a take-along snack

I subbed the applesauce with mashed banana, and used sugar instead of the stevia, but the cookies were devoured! (I also tripled the batch, since there are seven in my family). Once again, you’ve created a winner!

They are very soft & chewy <3 I recommend eating half of the cookie dough & baking the rest. hehe.

I love SIMPLE gf recipes. I don’t do a ton of gf baking because I simply can’t be bothered with the nine million ingredients and 8 hours that come with it sometimes! This is my kind of recipe.
