Four Cookies~ Vegan, Gluten-free, Sugar-free, Low-fat

Posted on August 29, 2012
One of my long-time nicknames is “Cookie Cheeks,” because of my full cheeks & love for cookies. In high school, when I discovered how easy it was to bake cookies, I got quite chubby. Er…really chubby. I love my cookies.

Now I dunno about you, but I still have a hard time trusting myself with a large batch of cookies in the house {especially when I’m home alone!}, so a recipe for four cookies is perfect for me. I adapted this recipe to healthify it, but it originally came from this post titled ‘A Safe Amount of Cookies.’ Aptly named- I concur.

I’ve made many alterations to the recipe to keep making it healthier, as I’ve made this recipe about 6 times now {does that mean it’s still a safe amount?}. If you don’t have gluten-free flour, stick with the all-purpose and ignore the xantham gum. It’s delicious either way.

This recipe is for four cookies…so why are there only two in this photo?

    Nom to the max!!! :-D
I’m exactly the same way, Char! It’s unfortunate, but I’ve been known to eat more than half of a batch of cookies in one sitting. Yesah, really a serious problem (but it’s also a really seriously delicious problem!). So this is a perfect recipe for me to try out! I can hardly wait! I might make some before my family goes on a hike this afternoon, as a take-along snack :)

  2. I love this recipe Char–under 15 minutes? you can’t beat that!

  3. CHAR you cookie monster!! ;DD You are a GENIOUS! How’s the consistency in these cookies? Haha sometimes I prefer cookie dough to when they’re baked….

You know the way to my heart! I can’t wait to make these :) I love SIMPLE gf recipes. I don’t do a ton of gf baking because I simply can’t be bothered with the nine million ingredients and 8 hours that come with it sometimes! This is my kind of recipe.

Totally agree – 4 cookies is perfect. If I make more I eat them all. Looking forward to making cookies. (ok – eating them) :-)
