Peanut Butter Cookie Dough Balls ~No Sugar
Now onto peanut butter cookies!
Remember the first Peanut Butter Oatmeal Cookie Dough Balls I posted? These are similar, but do taste a little different & have a slightly softer, more cookie-dough-like texture. AND they don’t have any sugar in them this time! AND they are addictive & amazing! Woohoo
There is NO BAKING involved with these babies! All you need is a large mixing bowl & a spatula. Oh, and a hungry belly.
Once again, the almond pulp comes from making my own almond mylk. If you haven’t yet jumped this bandwagon, then you can use almond meal, ground oats, ground almonds, etc., in place of the almond pulp. Just keep in mind you may need to add a touch of almond mylk to the mix.

| Peanut Butter Cookie Dough Balls ~No Sugar |
- 1 1/4 cups almond pulp
- 1/2 cup oat flour
- 1/2 cup rolled oats
- 1 tbsp powdered stevia
- 1 tsp cinnamon
- 1/2 tsp sea salt
- .
- 1/2 cup peanut butter
- 1/4 cup maple syrup
- 2 tsp vanilla
- In a large mixing bowl, stir together all of the dry ingredients with a spatula until well incorporated.
- Add in the wet ingredients, continuing to stir until mixed well & dough comes together.
- Line a large plate with parchment paper. Use an ice cream scoop to portion dough balls, dropping onto parchment paper.
- Eat. Store remaining dough balls in the fridge, covered.

Oh my, this looks SO good!! What is almond pulp?! It sounds awesome! I’m guessing it helps contributes to those cookie dough balls delicious looking texture… yum!! And of course, you know I love that there’s no sugar!
