A gluten-free golden cake with vanilla buttercream frosting that had everyone raving. It was moist, flavourful, & not at all crumbly. The frosting was creamy, rich, & satisfying. Not bad for my first wedding cake, eh?

Believe it or not, the cake came from a Betty Crocker Gluten-Free Cake Mix. Mom thought it might be best to stick with a cake mix she knew & trusted rather than have me try to figure out a new recipe for golden cake. Oky doky! Of course, because the box only contains dry ingredients, the mix itself was vegan.

I used Earth Balance for the cake rather than butter, but when it was go time to make the cake, I realized I hadn’t brought any egg replacer with me to mom’s place. I was down to the wire time-wise, so I used the eggs my mom has been buying from the free-range farm down the road for years. After the wedding, I even got a chance to visit the chicken farm blank Wedding Cake: Gluten Free Golden Cake with Vanilla Buttercream Frosting Content with what I saw, I bought a dozen of my own eggs to bring home.

But back to that cake! I made 4 cakes in an 8×8 and made a big square with all 4 of them. I filled in the cracks, sides, & tops with icing to make it look like one big cake. I used my awesome cake decorating set that Dallas bought me for Christmas to pipe on the lettering & flowers {both coloured with blue & yellow food-colouring}. I tripled this Classic Buttercream Frosting recipe, as it had great reviews & looked pretty fool-proof. Unfortunately, because we had to leave the cake on the counter for more than 24 hours {definitely no room in the fridge!}, I couldn’t use Earth Balance since it melts so easily. The icing itself contained butter, as it was the only way to make the cake shelf-stable.

For the finishing touch, my mom’s good friend Lana donated the wedding cake topper, as it used to be her parents’. So beautiful :’) I’m so happy with how it all turned out.

          • I’m doing a road trip with a couple of friends. We start out in New Jersey going to Atlantic City then Philadelphia, Wash DC, Knoxville, Asheville and finally down to Georgia and our final destination Atlanta. Very excited :D I’m in company with three meat loving dudes though so I will have to fight for my visits to whole foods market etc. Haha. Looking forward to sending you a new package!!
