Vegan Cheesy Rice with Broccoli
Ever since we discovered that Costco carries sushi rice, it has been a daily staple in mine & Dallas’ University fund food budget. $22.99 for 25lbs of rice? You can’t go wrong. Even though we eat 2-4 servings daily, we have barely made a dent in the bag. As a result of living on rice, we are way under this month’s food budget for the first time EVER. We’ve also been buying pre-chopped broccoli from Costco, which is wallet-friendly & saves me time. I love me some cheap rice & broccoli.
Our favourite meal with the sushi rice lately is this cheesy rice dish. The cheese sauce comes from my Easy, Amazing, Vegan Mac & Cheese For One recipe.
It’s amazing how suddenly I have learned…that I can bribe Dallas to do dishes with the promise of Cheesy Rice as reward. Pretty fair transaction, I must say.
Of course you can use any rice or pasta in this dish, but sushi rice is especially good because of its “sticky” quality. It’s much softer than other rices, & highly addictive <3 Thank you, Costco, for making sushi rice affordable for students.
Running & School Stuff: I have been stupidly busy between work, classes, & studying (which is why I rarely blog anymore), but I am maintaining my sanity with the Learn to Run 10k program. YES, I’m still doing it! I just finished Week 3, and I feel like my body is adjusting. My knees are much less sore, my breathing is easy, and running feels…FUN!! WHO KNEW?!?! Next week is a recovery week, which basically means I’m running the same this week as I did last week. So that’ll be good, especially for my knees. Also, did you know that swinging your arms faster will make you RUN effortlessly faster?? Yeah. Awesome.
P.S. in regards to being stupidly busy, I am kinda loving it. My classes are all super interesting this semester, my profs are really fun, I’ve made a bunch of new friends, & I’m now on a research team at the University studying clinical disorders! WHAT?! Awesome, right? So stoked. This whole year is going to be amazing.

| Cheesy Rice with Broccoli |
- 1/2 cup sushi rice, dry
- 1 1/2 cups water
- .
- 2 tsp olive oil
- 3 cups broccoli, chopped
- .
- 1 tbsp Earth Balance {or other vegan butter}
- 1 1/2 tbsp all-purpose flour
- 1 cup plain almond mylk, unsweetened
- 1/4 cup Daiya cheddar shreds
- 2 tbsp nutritional yeast
- sea salt & black pepper, to taste
- In a small pot, combine rice & water. Bring to a boil.
- Stir rice for 1 minute, reduce heat to minimum, and cover with a lid. Let simmer until water is absorbed, about 20 mins.
- Meanwhile, pour oil into a non-stick skillet over medium heat. Add chopped broccoli and allow to cook until golden brown, stirring every 1-2 minutes.
- When rice is done, scoop evenly into two bowls and return pot to stove to prepare the cheese sauce.
- Over high heat, melt Earth Balance in the pot. Stir in flour to create a roux. Allow to soften for a minute or so.
- Add almond mylk, Daiya, & nutritional yeast. Stir well and bring to a boil. Continue to stir for 2-3 minutes, bringing to a full rolling boil. Reduce heat to medium-low, allowing to simmer 3-mins. Stir in sea salt & black pepper to taste.
- If broccoli is done, scoop evenly on top of prepared rice.
- Pour prepared cheese sauce evenly onto rice & broccoli dishes. Serve warm.

You’ve re-created a child-hood favorite! Yum! When I was little, anything with gooey cheese (read noodles and cheese sauce) was devoured by me. I never cared for uncooked cheese, but I loved the melty stuff.
And I’m very into running right now, and I’m just restarting college today. Ugh, biology is not loving me, and my acting class is really a little bit more than I can chew. I’m kinda nervous about that class, since I’m a bit of an introvert, and I missed the first day of class (oops). :/ I wish you the best of luck with your school, Char!
Thanks, Katie! Gooey cheese was a childhood favourite for me, too. Dare I say…Kraft Dinner was one of my favourites! lol. But even though I eat dairy sometimes now, I actually prefer this recipe to the “real” thing. Even better than KD or other mac & cheese! I hope you get a chance to try it. It’s addicting
I hear ya on biology- I just finished that in July. Math is my struggle now. Hang in there! I hope acting turns around for you, too.
