Hey, foodies! Miss me? I’m still alive! Just swamped with classes, homework, work, etc. I’m in the middle of midterms right meow, but so far, so good. I like being kept busy, as it challenges me and I learn more. Being busy also inspires me to create recipes like this:

If you’re like me and you loooove rice pudding, but haaaate waiting two and a half hours or more for it to cook, I have a solution for you! Have you tried So Delicious coconut milk yogurt in vanilla flavour yet? Because it’s seriously the best <3

Basically, this recipe is simply a mixture of cold, leftover sushi rice, some vanilla yogurt, cinnamon, sweetener, & a pinch of sea salt all stirred together. THAT’S IT!! It’s so easy, so addicting, and so affordable for us cash-strapped college kids. I know you’re going to love it!

For those keeping up on my running: I’m still having a hard time with my knees, but my running is going great otherwise. I’m on Week 5 of Learn to Run 10k, and I still really look forward to going for a run in the mornings. It wakes me up, sets me in a positive state of mind, and…I keep seeing deer on my run!

See the one on the far left? I was walking past her (on my walking interval), and she walked up to me and just stood by the road about half a foot from me!! I could have reached out to touch her face, but I didn’t want to spook her. Sooo neat! A great motivator for me to lace up my sneakers, as the deer seem to love this spot under the tree for their breakfast in the mornings.

30-second Creamy Vanilla Rice Pudding {Vegan}

The only equipment you need is a spoon and a bowl! Stir it up and you have dessert blank 30 second Creamy Vanilla Rice Pudding {Vegan}
Ingredients
  • 3/4 cup cooked white sushi rice, cooled
  • 3-4 tbsp So Delicious coconut milk yogurt
  • stevia or sugar, to taste
  • cinnamon, to taste (start with 1/4 tsp)
  • pinch nutmeg
  • pinch sea salt
Instructions
  1. Put all ingredients together in a bowl and stir ‘em up! Serve immediately.

    Recipe looks amazing and simple, can’t wait to try it. For your knee’s I would highly reccommend you check out the book Chirunning by Danny Dryer. A friend suggested it to me when I was complaining about my knee’s hurting and it has been like night and day with no knee pain at all since.

    I love the rice pudding recipe. My daughter used to have leg issues whenn she would run. Look up the MELT method. It is fabulous and it works. Hopefully there is an instructor in your area.

    Yum! I have a recipe for rice pudding that uses almond milk. I think I’m going to need to hit up Costco for almond milk lol.

    • Thank you, Catherine! I am pretty lucky to live here :D I live on Vancouver Island in Canada, where the wildlife is everywhere! We even have a local family of raccoons that live across the street from me…they come and check my compost bin every night to see if it’s locked! lol. The bunnies on our University campus are pretty domesticated, too. One sat right beside us on the grass yesterday. I love where I live!

      I hear ya on cheap treats! Do you have a Costco nearby? We bought a 22lb bag of sushi rice from Costco for $22 and have been living off of it since the semester started. I’m pretty sure it’ll still be around by next semester, too :P It’s great for sweet or savoury dishes!   12. Iiih, I love rice pudding. It’s so christmas-y :) In Sweden it’s a tradition to eat rice pudding for breakfast on the 24th. Want to try that yoghurt though!! We don’t have any almond yoghurt here. Buhu! I’m impressed by your progress on the 10k program. Good girl! Half way there!!

  13. Wow! I love deer, they are so sweet! I love rice pudding! The last time I had it, a friend made it for me, but that was like 3 years ago! I have got to try this recipe. It looks delicious and I love that it is so easy!
