Welcome to Char’s Kitchen! My name is Char (obvs), _ I love food! One of my passions in life is to share a healthy, exciting _ delicious lifestyle with others using simple _ creative recipes. Whether you want to fully embrace a vegan/vegetarian lifestyle or merely flirt with it, I’m confident that you’ll find my abundance of wholefood recipes delicious, beautiful, _ satiating.

Most of the recipes on my blog are vegan {as I prefer to eat that way}, but I do sometimes eat a vegetarian diet. I will always be honest about the ingredients I use _ the food choices I make, but I am not perfect _ will never pretend to be. Home: I live in Nanaimo, BC, Canada on Vancouver Island with my wonderful man Dallas, and our fur babies, Mowzers _ Gizmo. As you read through my posts you’ll likely hear more about them, too.

Education: I completed the School _ Community Support Worker Program at Vancouver Island University in 2009, and I now work as an Educational Assistant and Community Support Worker. After finding limitations in my career, I knew I wanted to go back to school _ do more. After two semesters in the Child _ Youth Care Program, I talked to an advisor about finding a new path. I am now currently re-registered at VIU to finish my BA with a major in Psychology. From there, I plan to complete my PhD in clinical psychology and find a career as a clinical Psychologist and research. The mind and behaviour have always fascinated me, and I love learning about the complexity behind personality and psychological disorders.

Food History: I grew up eating a pretty standard North American diet of Kraft Dinner, cereals, canned pasta, and fast food. Even as I got older, I learned how to make things like Kraft Dinner, scrambled eggs, and oatmeal in the microwave. I was a pretty normal child, but my diet eventually left me at a heavy weight in my teens with horrible acne and low self-esteem. I had no idea how to take care of myself or eat a healthy diet, and so I felt helpless. Because of how I felt about myself, I became lost in cycles of bingeing, restricting, _ compulsive exercising. Eventually my unhealthy relationship with food developed into bulimia, and I felt totally out of control.

When I finally felt like I needed to get better, I did so without help. Each attempt at ‘recovery’ left me even more obsessed, and my eating disorder evolved into anorexia with exercise bulimia. I restricted calories, exercised for several hours a day, and lost a dramatic amount of weight. Others saw it, but through my eyes I was still ‘fat.’ After being offered a modeling contract, I started to understand a little bit more about how skinny I was, but not much. My agency further ingrained in me the “importance” of making my waist another 2cm smaller, or switching to pilates in order to reduce the muscle ‘bulk’ in my thighs. My obsession with measuring and weighing and counting continued for years after I left modeling, and I allowed it to control whether I had a good day or a bad day.

Years of this back and forth between anorexia and bulimia became mentally and physically exhausting. I hated the secrecy and misery, and I just wanted to feel normal. My disorder was affecting my work ethic, my relationships with people who mattered to me, and my life as a whole. I finally sought help from a counsellor, though it has taken years of work and patience to get me to where I am today. After understanding the emotional issues at the root of my disorder, I was finally able to learn how to start breaking negative habits. For years I had tried to ‘fix’ myself with different diets or exercise routines, and I finally realized I was going about it all the wrong way. I truly believe that anyone struggling with addiction would benefit from the help of a counsellor, and there is no shame in it. Asking for help is the first step to recovery.

Today I am happier and healthier, and I have a much better relationship with myself and with my food. As I’ve fought through my negative thoughts about myself, they’ve become quieter. Consequently, I feel stronger. I take charge of each day as it comes and do my best to keep improving. Life is about progress, not perfection. I’m so thankful for each and every day!

    Hi Char! I found your blog from a comment you put on Oh She Glows and I am so glad I found you! You have a great blog and you are so inspiring.     Hello Char. Thanks for the wonderful chickpea ala king recipe. I had something like this last week at a vegetarian potluck and thought it was just the right thing for me. I know what you mean about repeat meals…so good you want to have it over and over. If I can get it just right it’ll be one of my new healthy comfort foods.
